I really don’t like mk1 escort with big arches.

would the car make a good track day with standard arches? The wheels rub pritty bad on times, should I go down to 7” wheels? 

I also think Harris performance fitted wheel spacers they can’t be helping?

With the tyres your proposed running on 8" wheels you would get more grip with correct tyres on 6" rims.

I've used Yoko a048,s toyo r888 and Dunlop dz07,s. All awesome in the dry. Go home of its wet.

I use khumo intermediate, they do a road legal track day tyre. On 6" rims there is quite a good range from various manufacturers. If you look on 185/60 sort of tyre size on the net for track day tyres and pending your budget go from there.
