required for mk2 escort dashboard...ie cowling,stalks,ignition etc I literally have nothing,......or a guide to what goes where and what size would be fantastic?

if it's a mk2, most nuts and bolts you'll need will be metric so sourcing a section of various sizes from a local supplier, get them over length and cut to length as necessary, is your cheapest option for bolts.
