I've just bought a mk1 escort off a mate who has had it sat in his garage for the last ten years. It has the usual rust issues and briefly needs full floor pan, middle to rear chassis, sills, front crossmember etc. You get the picture! After looking at some of the resto's on here I'm inspired to do it myself, I've restored a mk1 mex I used to have but it needed no welding so this will be a steep lurning curve. Plan is simple... Make it solid by using as many new panels as it needs( magnum panels ) steel bubble arches, fast road xflow or pinto( came with both) and just enjoy it!! Every little helps to fund it! The flared Twincam/Mexico arches look great and their already on and in good condition. I would keep them as is. Its hard to find good rubber to fill bubble arches these days.
