For my cars, I have put apple I-tags in them but you can get some that work with apple and android now, its only the size of a 10 pence piece so easily hidden and it uses any compatible phone to transmit is position

I had a Focus RS a few years back that had to be parked on the road outside my house and obviously attracted a bit of attention. I had a ghost immobiliser fitted which at the time were one of the best . Not cheap though , I think it was about £400 at the time. Also as a visual deterrent I had a disc lock on the steering wheel , a lock that fitted over the hand brake and around the gearstick ( had this in the shed from the late 80s ) and a wheel clamp . Was a bit of a faff putting it all on or off but did the trick . Also had one of my security cameras pointing at it . Had plenty folk mooching around it over the 2 years I owned it but no one attempted to take it .

Im sure the I-tags work well as I caught some dude trying to fit one to my car at the reservoir one day. Just saw a pair of legs sticking out from under the car. I kicked his shoes and demanded to know what he was up too and could see the tag in his hand. My dog just licked his face while on the ground, useless! LOL He just said he was taking a look and then got up and took off.

I must admit that was the first thing that came to mind but I thought better of it just in case he has a good reason. That was before I saw the tag in his hand though.

The problem with airtags is they can easily be detected and found. 

While I've recently left, I have been working in a semi-technical role in an IoT development company (internet of things, an umbrella term that includes such tech) for the last 6 years and could easily make a tracking system but prefer not to reinvent the wheel, especially when there are potential insurance premium advantages to dedicated, off the shelf car tracking products. I could be tempted to add a DIY solution alongside something commercial. The DIY methods always add a layer of security by obfuscation. If it's not a known system there can be no known weaknesses, hack, etc.

Apple tags are becoming very prevalent at car and bike shows. Recently a pal of mine found one under his seat on his Suzuki GT 750. Whilst this technology is good, it’s open to abuse like every other invention. I follow grass roots and pro motorcycle racing, it’s rife with stories in some places. 
 

The tag was discovered by the already installed app on his phone. Although not everyone has Apple/Android. Most classic thefts invariably are taken away on car transporters. The key is out of sight for those lucky enough with a garage or storage. Physical deterrents seem the sensible option. Disklock, wheel clamps and if so desired, removable steering wheel. 
 

I researched clamps and the London Triangle looks good. As mentioned, it’s a lot of faffing but essential.

It’s difficult discussing security on a platform where all and sundry can see it. Have to be mindful of what you say. We could do with a secure place where it’s locked to the outside. Just a thought.

I'm a dinosaur with technology, so what are these tags? How do they work? and can they also be fitted to motorbikes?

They work by using the Apple "FindMy" network. Basically, apple have hijacked every apple device's bluetooth to detect the signal from an air tag and then tell iCloud where that airtag is without the apple device owners knowledge. Obviously that also tells them the apple device owners location as well. Most people believe it only allows them to find their iPhone, they don't know that it's also enabling the airtag technology. Because they work by bluetooth they are extremely easy for a thief to find and remove. The signal can also be easily blocked. 

Any professional thief will locate and remove your airtag in seconds. 

You could certainly attach one to a motorcycle.

I wouldn't have noticed him. Instead I'd have thought of a reason to jump in the car, start it and drive over him away very suddenly.
